I just tried this new cookie recipe and I must say, they are DELICIOUS! Here's how to make them:
1/2 cup shortening
1/2 cup peanut butter (creamy will work better)
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 teaspoon baking powder
1/8 teaspoon baking soda
1 egg
2 tablespoons milk 1
teaspoon vanilla
1 3/4 cup all-purpose flour
1/4 cup granulated sugar
Milk chocolate kisses or stars
Preheat oven to 350F. In a large bowl, combine shortening and peanut butter. Beat with an electric mixer on medium to high for 30 seconds. Add the 1/2 cup granulated sugar, the brown sugar, baking powder, and baking soda. Beat until combined. Beat in egg, milk, and vanilla until combined. Beat in as much flour you can with the mixer, then use a spoon to stir any flour remaining. Place 1/4 cup of granulated sugar in small bowl. Shape the dough into 1-inch balls, then roll the balls in the sugar until fully coated. Place balls on ungreased cookie sheet two inches apart. Bake in oven for 10 to 12 minutes or until edges are firm. Immediately after taking cookies out of the oven, press a chocolate into the center of each cookie, then place on wire rack to cool.
